The good news is that you have the choice to take control of your own health. Eliminating processed foods from your diet and replacing them with traditional ways of processed foods is one of the most effective methods to take charge of your own health. Among all the processing methods, oil processing is a significant element that defines our health and wellness. Chemicals are used to filter refined oil. It can be disinfected using acids, alkalis, or even bleach. It may be used to neutralize, deodorize, or even filter harmful substances such as hexane, which is extracted from petroleum and crude oil! So, does that mean we are consuming something free of crude oil extracts? It can even harm the immune system and cause digestive problems. It has an effect on the respiratory system, causing shortness of breath, coughing, and heartburn. Caustic soda is used in the neutralization process to remove free fatty acids. They rarely contain any nutrients. Increased obesity rates, associated diseases, and increased awareness of how oil is extracted are just a few of the reasons why wood pressed oils are making a comeback in our kitchen pantries. With so many cooking oil options available in our markets (such as gingelly, rice bran, olive oil, canola, and so on), it is critical to make informed decisions. Going the local, non-blended, and chemical-free route is an excellent method to do this right. And if this appears to be a lot of work, just ask your grandmother! Going back to your grandmother’s foods is your best option.

So, what is the best way to consume edible oils that can retain maximum nutrition and have a minimum harmful impact on our health? The answer lies here. Opt for wood pressed oils that contain all of the necessary nutrients, such as proteins, vitamins, lecithin, and phospholipids. It has low cholesterol levels because it is made at a low temperature. It is beneficial to the skin and aids in weight loss. It raises the good cholesterol (HDL) levels in our bodies while decreasing the bad cholesterol (LDL). It is high in antioxidants and can help prevent cell damage caused by free radicals.

Here are some more benefits of using wood pressed oil regularly -
Unprocessed - No preservatives or chemicals have been added.
Pesticides are completely absent (which are arguably carcinogenic).
High in Vitamin E and micronutrients, which are essential for our overall health.
Antioxidants are retained.
It is more viscous and retains all of the flavors because it is manually filtered. This results in a reduction in oil consumption when compared to highly processed refined oil.

Before refined oils made an appearance, we were used to wood pressed oils, which was called "Chekku ennai/Ghani tel" in Tamil. The seeds were crushed/pressed with no or minimal heat, and the manufacturing process was simple, with no solvent added. As a result, the end product was high-quality and nutrient-dense, making it ideal for cooking.
